Our Favourite Low Waste Vegan Banana Muffins

We had some overripe bananas just waiting to be made into something yummy! These can easily be made zero waste - especially if you can make your own oat milk and they're vegan too. 

Makes 9 large muffins

Ingredients:
1 ¾ cups plain flour
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1 tbsp cinnamon powder
¼ cup light flavored olive oil or vegetable oil
1 tbsp vanilla extract
1/3 cup white sugar
1/8 cup of oat milk
3 large bananas (preferably overripe), mashed

Optional toppings:
Rolled oats
Chocolate chips
Walnuts 

Method:
Grease a 12 hole muffin tin with baking spray, oil or margarine and preheat the oven to 180 degrees Celsius. 
In a large bowl add the mashed bananas, oat milk, sugar, vanilla extract and oil.
Mix together and then add the plain flour, baking powder, baking soda, salt and cinnamon - mix again until combined.
Scoop the batter into the muffin tin, you'll want to fill it up 3/4 of the way. Add your optional topping - we added some rolled oats but some chocolate chips would be even better!
Bake for 20 - 25 minute, until golden brown or test it with a butter knife put into the centre - if it comes out clean, it's good to go!
