I don’t know if everyone would classify this as a salad but I do! It’s delicious cold or hot and lasts for days in the fridge. It’s affordable but a little bit luxurious, it’s easy and it’s filling. It’s something that you can throw together when you’ve had long day and it doesn’t take hours but it’s filled with a lot of goodness too. It’s my favourite salad right now.

Anyone else enjoy a sweet snack every now and then? These cashew stuffed dates dipped in chocolate are the ultimate indulgence and they’re vegan too! Easily stored in the freezer or fridge, these stuffed dates will be your go to for that after dinner sugar hit or just because. We’ve picked cashew butter but you can definitely mix it up and add almond butter or peanut butter - whatever you have in the cupboards is fine! And if chocolate isn’t your thing, don’t add it or maybe dip half in, the choice is really up to you.

Who doesn’t love a tortilla? They’re super easy to make, they delicious, cost effective and so versatile! The only downside to modern tortilla is that it usually comes wrapped in single use plastic - not ideal. We thought we’d share our favourite tortilla recipe to help reduce some of plastic out there AND everything taste more delicious when you make it yourself! These are great as wraps, cut into strips served with hummus and guacamole - you could even use it as a pizza base!

One of the downsides to buying hummus is that 99.9% of the time it comes in plastic. There's so many benefits to making your own hummus at home - it’s easy, you can customize it to your taste and you can reduce your waste all at the same time!

This one pot vegan vegetable curry is filled with flavour and all of the good stuff. I love a recipe that doesn’t require a lot of effort and this is definitely one of those recipes. Chickpeas - an essential in a plant based diet! They’re versatile, cheap and low waste too! You can make falafel, hummus, patties and you can make these incredibly delicious crunchy roasted chickpeas. Perfect in salads, toasted sandwiches or even as snack. These can easily be changed up by adding your favourite spices or cooking for them shorter amount of time for a softer texture or longer for a crunchier texture.
